Super Crunchy Meringue Cookies



These meringue cookies are super crunchy with great flavor and it tastes fantastic. I melts in your mouth and the crunch is so satisfying.


What are meringue cookies? For those of you who don't know what a meringue cookie is, a meringue cookie is egg whites and sugar whipped until it is a meringue and piped jbto shapes abd baked a  low temperature for a long time. It's super crunchy and sweet.


There are only 3 ingredients in this neringue cookie and they are egg whites, sugar and lemon juice. Egf whites and sugar are needed for making a meringue and the lemon juice makes the meringue firmer abd it cuts out the eggy-ness. If you don't have lemon juice on hand, you can use vanilla extract, sane amount.


Ingredients: 2 egg whites     100g sugar 1 tsp lemon juice*

Directions : 1. Beat the egg whites until foamy and until the egg whites becone creamy. 2. Add in the lemon juice and beat until stiff peaks. 3. Add the sugsr gradually. This step is super important because if you add it all at once, it can deflate the egg whites and all the air. 4. Beat for 2~3 minutes until stiff peaks form and when you raise the whisk, the meringue doesn't fall and it holds its shape.     5. Pipe little dollops of meringue. 6. Bake at 100°C for 1 hour and let it cool completely before enjoying.

Recipe Notes: Instead of lemon juice, you can use vanilla extract, same amount. If you want a firm meringue, maje sure bowl and whisk doesn't hzve any water. It's crycial that there us no trace of egg yolk in the egg whites or else it won't whip up. You make this recipe with a handheld whisk it takes a long time and it's tiring so I strongly recommend using a electric mixer.
