Banana Bread



There are two kinds of people in the world and some of them are banana lover and the others are banana haters. I am defintely a banana lover and this recipe is the perfect banana bread and we gurantee it. If you have leftover ripe bananas on your counter? Make this banana bread! It's super, unbelieveably moist and super banana flavor. And its very quick to whip up.


Ingredients:

3 bananas, mashed

1/4 cup of maple syrup*

1/4 cup of granulated sugar

6 tbsp oil*

2 eggs

1/4 cup of yogurt

1 and 3/4 cup (215g) flour

1 tsp baking soda

1/2 tsp ground cinnamon

1/2 tsp salt

2/3 cup of walnuts or pecans*


Directions:

1. Whisk together the maple syrup, sugar, oil and yogurt. Add in the bananas and eggs. Whisk together to combine.

2. In a seperate bowl, add in the flour, baking soda, salt, pecans and cinnamon and whisk to combine.

3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix.

4. Pour into loaf pan.

5. Bake, at 180 for 60-65 minutes. Stick a toothpick at 55 minute mark and if it come out clean, take it out and let it cool completely. If not done, let it bake more.


Recipe Notes:

Honey or agave can be used instead of maple syrup.

Applesauce can be replaced with oil for same amount.

Use whatever nuts you prefer. If you do not like nuts or allergic, feel free to leave them out.

This banana bread still stay moist at day 2!
