Castella is a really soft, light fluffy egg sponge cake. It's really popular in our country and its unbelievable soft light and super spongey. This cake isn't overly sweet and this is perfect for an afternoon tea or just because they are something you defintely need in your life!
Ingredients:
4 Eggs, seperated
120g sugar halved
20g milk
20g oil
80g cake flour
1/2 tsp vanilla extract
Directions:
1. Whip up the egg whites until foamy and start adding the sugar gradually until stiff peaks. Set aside.
2. In a seperate bowl, add in the egg yolks, and the half of thesugar and whip uup together until lighter in color and slowly dripping.
3. Add half of the meringue to the egg yolk mix and gently fold together.
4. Sift in the cake flour and mix together gently. Add in the rest of the meringue.
5. Combine the oil and milk together. Add in a little bit of the batter and mix to combine. Add this back into the batter and mix gently. Make sure not to deflate any air bubbles.
6. Bake at 180'C for 15 minutes then lower the temperature to 170'C and bake for 45 minutes.
