What is a chiffon cake?
A chiffon cake is a very light cake made with vegetable oil, eggs, sugar, flour, baking powder, and flavorings. Its distinctive feature is from the use of vegetable oil, instead of the traditional fat which is solid at room temperature, such as butter or shortening.
What does it taste like?
It's so, so light and fluffy. Almost like you are eating a cloud. it tastes a little like castella but it is more sweet. This chiffon cake isn't overly sweet and is the perfect sweetness. Chiffon cakes are usually served as an afternoon snack with tea and it tastes so, so good with earl grey tea!

Ingredients:
3 eggs, seperated
50g milk
25g oil
80g sugar
80g cake flour
1/2 tsp baking powder
1/4 tsp baking soda
Directions:
1. Whip up the egg whites until white and stiff and half of the sugar (40g) little by little.
2. In a seperate bowl, mix the egg yolk with the leftover sugar.
3. In a medium sized bowl, mix the milk and the oil together. Pour into the egg yolk mixture.
4. Sift in the cake flour, baking soda and baking powder and mix with a whisk to combine.
5. Add in 1/2 of the meringue and mix together. Add in the rest of meringue and mix together until there are no lumps of meringue. Be careful not to deflate the bubbles.
6. Pour the batter into the chiffon cake and bake at 170'C for 35 minutes.
7. Right after it's out of the oven, flip the chiffon cake tin and put it on a cup until completely cooled.
8. Add some whipped cream if desired.
Recipe Notes:
You can add 3g of earl grey tea powder to make earl grey tea chiffon cake.
Or add 15g of cocoa powder for chocolate chiffon cake.
If you are a match fan, you'd probably want match chiffon cake. Add 8g of matcha powder for match chiffon cake!
