Who doesn't love lemon bars! They are tangy, sweet and creamy. And they are perfect for spring. I highly recommend that you make these! You only need 7 ingredients to make them! (we found this recipe on Sally's baking addiction)
Ingredients:
For the Shortbread Crust
1 stick (115) gram of butter
1/4 cup (50g) of sugar
1 cup and 1 tbsp (133g) of flour
Lemon Filling:
3/4 cup of sugar
3 tbsp of flour
3 eggs
1/2 cup (120ml) of lemon juice
Directions:
1. Preheat the oven to 160'C and line 8x8 inch pan
2. Make the crust mixing melted butter, sugar together. Then whisk in the flour until fully combined until it forms a buttery dough.
3. Press the dough into the pan and bake for 17 minutes
4. Sift the flour and sugar together. Add the eggs one by one until fully combined and add the lemon juice.
5.Pour the filling onto the crust and bake for 20 minutes until it is slightly jiggly in the middle. Put it in the refrigerator for 1-hours until it is set and completely cooled.
6. Cut the bars as big or as small as you desire. Enjoy!
Recipe Notes:
You can make any kind of cirtus bars you wish. You can make orange bars, grapefruit bars, lime bar or etc.
Also when using lemon juice, for the best flavor we strongly recommand freshly squeezed lemon juice. (though we did get away with store bought)
