What is lemon curd?
A lemon curd is a type of jam that is made from lemon juice, water, egg yolks, sugar and cornstarch. It's smooth and creamy and has a tart lemon flavor and goes well with many desserts.
What does a lemon curd taste like?
Lemon curd is a type of jam that doesn't have any peel or pulp. the texture is perfectly mooth, creamy and luscious and it has a nice tangyness from the lemon juice and it's the perfect combination of sweetness and tartness. This recipe is the best one I found after trying various lemon curd recipes and failing. One of the problems I had when I was making lemon curd is that the lemon curd tasted likes eggs and it definitely shouldn't taste eggy. But this recipe, you won't even know a egg was in here!
Ingredients:
150g of water
120g lemon juice*
90g sugar
35g cornstarch
30g butter
2 egg yolks
Directions:
1. Mix together the water, lemon juice, cornstarch and sugar on low heat and heat it up until all the granules of sugar is melted. The texture should be slightly thick and not watery.
2. Add in the butter and mix together until fully melted and add in the egg yolks.
3. Cook it for 1 or 2 minutes until it all comes together and it is slightly thicker than before and is yellow and is the texture of pastry cream. Don't cook it for too long or else it will turn into lemon curd jelly!

4. Strain the lemon curd jus in case any of the egg yolk was scrambled. This step is optional but reccomanded.
5. Transfer the lemon curd into a separate bowl and put cling wrap directly on top of the lemon curd to avoid a lemon curd skin.
The lemon curd will last in the refridgerator for up to 2 weeks.

Eat it with scones, buiscuits, toast waffles, muffins and etc.
Use it as fillig for a tart of a pie such as lemon meringue pie.
The possibilities are endless and can be enjoyed with anything.
