Mocha Dacquoise

THE best recipe for a dacquoise! Crispy on the outside but still soft and fluffy in the inside. They taste incredible with the mocha chocolate filling.

This dacquoise is slightly crispy on the outside and light and fluffy in the inside and the mocha flavor is the best. It is super tasty and we gurantee that anyone who tastes this will be impressed.


What is a dacquoise?

Incase you don't know what a dacquoise is, we will tell you. Dacquoise is a dessert made from layers of meringue containing ground nuts, with fillings such as cream, buttercream, or ganache between. Thanks you very much Google. If you never heard of dacquoise you should really try to make them because they are fabulous.


What do they taste like?

These little treats are based on meringue. These are kind of a cross between a meringue cookie and a pavlova but the difference is that it has a filling in between and for these, we are filling them with mocha chocolate filling, which is unbelievably amazing. These can be made in larger sizes, such as dacquoise cakes.


Now that you know what a dacquoise is, so let's start making one!



Ingredients

For the dacquoise

2 egg whites

5 tsp (20g) sugar

1/2 cup + 1 tsp (52g) Almond powder

4 tbsp powdered sugar

1 tbsp+ 1/2 tbsp (12g) flour

For the Mocha chocolate filling

1/2 cup chocolate (3 ounces)

1/2 tsp corn syrup

1 tsp oil

1 tsp of water

1 tsp coffee granules


Directions:

1. Preheat the oven to 180'C

2. Whip up the egg white with the granulated sugar until stiff peaks.

3. Into the meringue, sift in the powdered sugar, almond powder and flour. Mix together until fully incorporated and the mixture should look kind of like macaron batter.

4. Pipe the shape you desire onto the baking pan and dust generously with powdered sugar.

5. Bake for 12 minutes. ( Dacquoise is something that you don't want to increase or decrease the baking time)

6. Let it cool completley on the baking tray.

Make the mocha chocolate filling

1. Over a bain marie or in the microwave, add the chocolate, corn syrup, oil and melt together.

2. Mix together 1 tsp coffee granules with 1 tsp of water then add it into the melted chocolate mixture. Put it into a piping bag to pipe.

Assemble

1. Pipe little swirls or dollops onto a dacquoise then place another dacquoise on top.

2. Dust with more powderd sugar (optional)
