I love making macarons. Even thought it is a little fussy to make, it so fun and the incredible taste is so worth it. These macarons are rolled sprinkled with oreo crumbs and rolled in them. These taste incredible and my friends loved them.
What are macarons?
Just in case you don't know what a macaron is, a macaron is a french cookie and the base is meringue. It is crunchy on the outside but chewy in the inside. It can be filled with many different fillings but today, we are filling ours with chocolate cream cheese frosting.
Ingredients:
70g egg whites
70g sugar
92g almond powder
84g powdered sugar
100g crushed oreo cookies without cream
150g cream cheese
1/3 cup sugar
1/4 cup cocoa powder
Directions:
1. Sift the powdered sugar and almond powder.
2. Whip up the egg whites until foamy and gradually start adding the sugar until stiff peaks.
3. Add the powdered sugar and almond powder and mix to deflate the air bubbles until the macaron batter falls down in a steady stream or you can do the figure 8 test.
4. Pipe the macarons and let rest for 6o ~90 minutes.
5. Bake at 150'C for 15 minutes.
6. Mix the room temperature cream cheese with the sugar and once creamy, add the cocoa powder. Add 2 tbsp of milk to thin it out.
7. Fill the macarons and enjoy!
