I love, love charlotte. It has a light, airy, spongey ladyfinger layer, a creamy, tangy cream cheese, pink yogurt layer and the white chocolate layer makes this charlotte over the top. A layer of strawberries gives a touch of freshness. It's perfect when you are trying to impress anybody becuase it's super impressive and pretty.
What is a charlotte?
A dessert made of stewed fruit or mousse with a casing or covering of bread, sponge cake, ladyfingers, or breadcrumbs. Today, we are filling them with ladyfingers, cream cheese, strawberries nad white chocolae and they are fantastic!
What does strawberry charlotte tastes like?
This tastes like heaven! This is incredibly, smooth and creamy. The ladyfingers are soft and spongey and the cream cheese filling is creamy and tangy and the layers of strawberries and yogurt add the freshness and the white chocolate balances it out the flavors and the white chocolate has a good snap when you cut into the charlotte.
Ingredients:
For the ladyifngers
2 eggs, separated
50g sugar
45g flour
5g cornstarch
powdered sugar (optional)
For the cream cheese filling
250g cream cheese
60g powdered sugar
For the strawberry yogurt *
95g yogurt
7g strawberry powder
For the white chocolate
1/2 cup of white chocolate
1/2 tsp (2g) corn syrup
1 tsp (4g) oil
Directions:
Make the ladyfingers
1. Whip up the egg whites with the sugar until stiff peaks form.
2. Sift in the flour and the cornstarch and carefully fold in together.
3. Add in the egg yolks and mix together until a smooth batter forms.
4. Bake at 180'C for 12 minutes
5. Carve in the desired shape and line the pan with the ladyfingers.
Make the cream cheese filling
1. Beat the room temperature cream cheese until completely smooth, then add the powdered sugar until the mixture is creamy and smooth.
2. Add the cream cheese filling into the ladyfinger bottomed tin and smooth it out. Layer strawberry slices.
Make the strawberry yogurt
1. Mix together the yogurt and the strawberry powder together until fully combined and spread on top of the cream cheese layer.
Make the white chocolate layer
1. In a bowl, melt the white chocolate, corn syrup and oil together in a bain marie a=or mirowave until fully melted. Pour on top of the strawberry layer. It might et a little bit mixed in with the yogurt layer but it's okay.
Chill for 3 hours
Recipe notes:
If you don't have strawberry powder, you can use store bought strawberry yogurt or just use plain yogurt.
