Macarons aren't so hard if you know the to how to make it. I will write down the tip at the bottom how to succeed macarons at you first try! Macarons are is a sweet meringue-based confection made with egg white, icing sugar, granulated sugar, almond powder or ground almond, and food coloring. You don't really need to use food coloring if you don't want to have color in you macarons. This makes about 14 shells, so 7 macarons. Do not change the ingredient's amount because then it will be very easy to fail.
Ingredients
50g Almond powder
40g sugar powder
1 egg white(40g)
40g sugar
Few drops of coffee
25g dark chocolate
14g heavy cream
1/4 teaspoon instant coffee
14g mascarpone cheese
1 teaspoon sugar
14g heavy cream
Direction
1. Sift the sugar powder and almond powder together. Set aside.
2. Whisk the egg white and put sugar in 1/2 at a time. When the meringue is almost set up, put in the coffee.
3. Sift in the almond mixture in 1 to the meringue and mix it with the spatula until it looks like lava or wet sand. Here's the tip to not over mix or mix less. Many people fail their macarons because of this part. Mix until you can make a 8 shape with your spatula. So when your batter can form 8 you should stop mixing.
4. Pipe it on to the parchment paper. You could also pipe it on to the mat, but parchment paper is better. let it rest for am hour until the top is smooth that their is no dough sticking on to your finger when touched. Bake it for 13 minutes in 160*C( 325°F )
5. Combine the dark chocolate and heavy cream and put in the microwave for 30 seconds.
mix them together. Put in the instant coffee in and mix it together again. Put it in the piping bag.
6. Whisk the heavy cream to 70% set aside.
7. whisk the mascarpone cheese and the sugar together. Put the 70% heavy cream in. Put it in the piping bag.
8. When the shell is completely cooled, pipe the chocolate filling roundly and pipe the mascarpone cheese filling in the middle.
